Grilled Chicken Breast
1kg chicken breasts
⅓ cup olive oil
1 tbsp + 1 tsp (20ml) NON-CONCENTRATED* or 1tsp (5ml) CONCENTRATED Smoked Flavours liquid smoke, any wood type will work.
Salt & pepper to taste

Add the olive oil and the chosen liquid smoke in a small bowl and mix well.
In a bowl that has a cover or a large Ziploc bag, add the chicken and olive oil mixture. If you are using a Ziploc bag, massage the chicken in the bag for 30 seconds. Marinate in the refrigerator for at least 20 minutes, preferably 1 hour.
Preheat your grill on high for about 10 minutes
Place chicken on an oven wire rack, season with salt & pepper and grill for 7 minutes per side, seasoning when you turn the breasts.
Remove from grill and serve. Let the chicken cool down for a few minutes if you are going to add it to a salad.
